Ingredients
Preheat Oven to 400 degreesBoil two cups of elbow macaroni unitl tender.In a large bowl combine 1 Cup Reduce Fat Cottage Cheese, 1/4 Cup Reduced Fat Sour Cream, 1/2 Cup Shredded Cheddar Cheese, and 1 Egg Beaten. Add Salt and Pepper to taste. Slowly stir in cooked Elbow Macaroni. Mix well then pour mixture into a casserole dish. Sprinkle 1/2 cup of Cheddar Cheese on top. Add Breadcrumbs if desired. Bake in oven for about 1/2 hour or until cheese starts to brown.
