Yum-O Pasta Salad

Ingredients
1 Box Ziti3 cloves Garlic1/8 c. Olive oil1/2 c. each - Onion, Zucchini, Squash (diced)1/2 c. each - Grape Tomatoes (halved)1/2 c. Fresh Spinach (or Arugula) - roughly chopped1/2 c. Parmesan Cheese (shredded)1/4 c. Goat Cheese (crumbles)Salt and Pepper to Taste.
Directions
1. Boil the pasta in lightly salted water.
2. Saute the onions and garlic in the olive oil (about one minute).
3. Add zucchini and squash
4. Add tomatoes
5. Add cooked (al dente) pasta to the pan of sauteed veggies
6. Salt and Pepper to taste.
7. Add a little past water if needed
8. Add spinach (or arugula)
9. Add cheeses
10. Garnish with fresh basil if desired


Makes 8 1-cup servings.

Variations: add chicken breast for protein. add more or less vegetables (or types of vegetables) for your liking. add some red pepper flakes for bite.
