Ingredients
3 cups frozen peas 1/3 cup shredded part skim mozzarella cheeseOR 1 stick of light part skim mozzarella string cheese. 1-2 T Grated Parmesan cheese1 1/4 Cups Fat Free Reduced Sodium Chicken Broth or Veg broth for vegetarian version.
Directions
*Either boil broth on stove and add peas and cook until tender, or microwave broth with peas on HIGH for 2-3 mins.

*If using string cheese, shred or cut into strips.

*In food processor or blender, puree peas and broth mixture. Add cheese and blend a few seconds more so that it melts and becomes all gooey and combines with the peas.

*Pour into bowls or cups, may need to be re-microwaved to thoroughly melt cheese.

*Add Parmesan as a garnish and serve.

MAKES 2 SERVINGS @ 225 cal each. Goes great with toast sprinkled with parmesan or whole grain crackers.
