Tofu- Pumpkin Pancakes

Ingredients
8 oz soft tofu, blended1 1/2 cups pumpkin, pureed1 cup whole wheat flour1 tsp ground allspice1 tsp baking powder2 eggs
Directions
In a large mixing bowl, mix the pumpkin puree and tofu.
In another bowl, sift the flour, allspice, and baking powder together. Stir into the pumpkin- tofu mixture, mixing well.
Beat in the eggs, and let the batter stand for 30 minutes.
Spray griddle with cooking spray. Drop the batter onto the griddle by tablespoonfuls.
Brown the cakes on both sides, and serve immediately with syrup or jam.
