Haddock on a bed of asparagus

Serves 22 filets of haddock1 pack of asparagus2 cups of frozen peas1 large onion (finely chopped) 2 tomatoes (chopped in small quarters)Salt, freshly grounded black pepper1 tbsp Extra virgin olive oil2 tbsp vegetable stock powder
Bring 1 tbsp of olive oil to heat in a saucepan; add the chopped onion and slat. Steer and cover until the onions are whitened. Add the chopped tomatoes, season with black. Let it cook on gentle heat then add a cup of water and the vegetable stock powder and the frozen peas (from frozen). Leave the peas to cook for 5 minutes then add the haddock filets to the sauce.
The haddock takes maximum 5 minutes to be cooked.
Grill the asparagus on a BBQ or in a pan . with a sprinkle of olive oil.
In a white plate center the grilled asparagus in the middle, put the haddock filet on top , then scoop the peas and some sauce on the top of the haddock.
For citrusy flavor lovers, you could squeeze some lemon juice on top.
