Super Macaroni and Cheese

1 box cooked elbow macaroni10 oz. cheddar/colby cheese ( low fat )4 tbs. butter1/3 c flour5 c. milk of choice ( I use 2%)
Makes 15 1 Cup servings. Bake at 375
Cook macaroni to almost done (approx. 10 mins) then drain. Put butter into large sauce pan and melt; add flour and make a paste. Cook for 2 to 3 mins to remove the flour "taste". Gradually add the milk and cook until thickened. Add 8 oz of the cheese and stir until melted. Pour over cooked macaroni and mix well. Place into a greased 4qt baking dish or 2 smaller dishes. Top with remaining 2 oz of cheese and sprinkle with bread crumbs if you wish. Place into pre heated oven at 375 and bake for 45 mins.
