Korean Spicy Potatoes

Ingredients
200 grams red potatoes, cut into chunks100 grams baby carrots1/2 cup sliced potatoes1/4 cup soy sauce3/4 cup water1 tsp sesame oil1 tbsp spicy red bean paste
Directions
Spicy red bean paste should be available as an Asian grocery. It can be omitted, if desired.

Add all ingredients to a sauce pan. Bring to a boil. Reduce heat, cover and let simmer until potatoes are fork tender.

Serve as a side dish with stir fry, Korean kalbi, bulgogi, or other asian dishes.
