Vegetable Roll Up

Ingredients
1 cup baby eggplant, diced1 cup zucchini, diced1 cup yellow squash, diced1 small box mushrooms, diced1 cup yellow onion, diced1 cup red pepper, diced4 whole wheat-low carb/low-fat large-size tortillas5 tbsp low fat mayonnaise1 tsp cumin1/2 tsp sea salt1 tbsp fresh garlic, minced1/2 tsp black pepper2 tbsp olive oil1 tbsp lemon juice or vinegar of choice
Directions
In a large bowl, add first 6 ingredients, toss with olive oil, salt and pepper.
Saute' in large skillet until veggies are tender.
Remove from heat and return to large bowl and set aside.
In a small bowl, mix mayo, cumin and pepper with 1 tbsp of lemon juice or vinegar.
Toss with veggies and place on tortilla.
Roll up and enjoy!
