Beef chimichanga

Ingredients
1 kilo of ground beef2 medium onion chopped4 cloves of garlic chopped2 large bell pepper chopped1 tbsp of ground cumin1 tsp ground red pepper2 large fresh tomatoes chopped (Keep these separate)4 TBSP tomato paste1/2 tsp salt1/2 tsp pepper2 tbsp vegetable oil1.5 cups of cheddar cheese10 flour tortillas
Directions
Brown onions, garlic, and bell pepper.
Add meat and cook for 10 min.
Add in the remaining ingredients, except fresh tomatoes.
Reduce heat and cook for 20 min. (Stir to prevent sticking…but not too much)
Add chopped fresh tomatoes last.
The mixture should be lightly sticky and little liquid.

Add meat mixture to tortilla
Add shredded cheese
Roll up, seam side down and bake for 15 min. @ 375.
