Crustless Zucchini Quiche

4 whole eggs(or 3 whole eggs and 2 egg whites)1/2 cup non fat milk1/3 cup shredded low fat cheese of your choice (I like cheddar)1/2 cup whole wheat flour1/2 tsp baking powder1 medium zucchini slicedGarlic salt and pepper to taste
Saute zucchini until just starting to soften.
Place in the bottom of a lightly greased pie plate or quiche dish
Add the rest of the ingredients in a blender and blend for several seconds until flour is fully incorporated and mixture is light and airy.
Pour over zucchini and bake at 375 for 30-40 minutes. Quiche is done when it is golden brown on top.
Feel free to omit the cheese. I add a small amount because it makes me feel indulgent, but it really isn't missing anything if you leave it out!
Makes 4 main dish size servings.
