Ruth's Carrot Wheat Germ Muffins

* Wheat germ, crude, 1 cup * *Whole Wheat Flour, 1 cup * Baking Powder, 3 tsp * Baking Soda, 1 tsp * Salt, 1 tsp * Granulated Sugar, .33 cup * Cinnamon, ground, 1tsp * Ginger, ground, 1 tsp * Allspice, .25 tsp * Olive Oil, .25 cup * Egg, fresh, 2 large * Milk, nonfat, .66 cup * Carrots, raw, 1.5 cup grated * *Orange Zest - of 1 orange, 1 serving
1. Preheat oven to 400 degrees F.
2. Grease muffin tins
3. Mix together dry ingredients
4. Add grated carrots to dry mix ture and toss.
5. Beat eggs and stir in rest of wet ingredients.
6. Make well in dry ingredients and add wet mixture, folding together only enough to mix.
7. Spoon into prepared muffin tins.
Makes 12 muffins.
