Muffins:4 c. All Purpose Baking Mix2/3 c. Quick or Old Fashioned Oats2/3 c. Granulated Sugar1 tsp. Ground Cinnamon2 Large Eggs1 can 30 oz. Libby's Easy Pumpkin Pie MixStreusel Topping:3 tbsp All Purpose Baking Mix3 tbsp Granulated Sugar3/4 tsp Ground Cinnamon2 tbsp ButterInstructions for Muffins:Preheat oven to 400 degrees. Paper line or grease 24 muffin cups.Combine baking mix, oats, sugar and cinnamon in a large bowl. Combine pumpkin pie mix and eggs in a medium boal, mix well. Stir into oat mixture just until moistened. Spoon batter into prepared muffin cups, filling 3/4 full. Sprinkle with streusel topping. Bake 14-16 minutes or until wooden pick inserted in center comes out clean. Remove from pans to cool. Best served warm.Streusel Topping Instructions:Combine baking mix, sugar and ground cinnamon into small bowl. Cut in 2 tbsp butter with pastry blender or 2 knives until mixture is crumbly.
