Honey Oatmeal Cookies

4 cups rolled oats1 tsp baking powder1 tsp cinnamon1/2 tsp salt3/4 cup unsalted butter (softened)1/2 cup liquid honey1 egg1 tsp vanilla extractOptional: 1/2 cup semi-sweet chocolate chips [Not calculated in this recipe]
In food processor: process 2 cups of rolled oats until becomes like flour. Add baking powder, cinnamon and salt. Combine.
In a seperate bowl: blend butter, honey, egg and vanilla. Stir in processed oats mixture and remaining 2 cups of rolled oats (add optional chocolate chips here).
Drop heaping teaspoons on a baking sheet about 1 inch apart. Flatten if you wish.
Bake at 375F for 20 minutes OR until lightly browned at the edges. These cook fast depending on ovens, so you need to watch them.
Let cool down. Makes 36 cookies. 1 serving equals 1 cookie.
