Slow Cooker Spicy Thai Peanut Chicken

Ingredients
10 Boneless, skinless chicken thighs1/2 cup natural peanut butter, smooth style1/4 cup soy sauce1/4 cup brown suger3 tablespoons White wine vinegar3 tablespoons water1 tablespoon hot sauce (like Siracha)1/8 teaspoon ground ginger2 cloves garlic, chopped1 onion, sliced into rings5-6 cups steamed, brown rice5 teaspoons lime juice
Directions
Slice onion into rings and place on bottom of slow cooker. Put peanut butter, soy sauce, white wine vinegar, hot sauce, ginger, chopped garlic, and water in a microwave safe bowl. Microwave on medium heat until peanut butter melts enough to stir everything together (it's okay if there are some lumps). Stir the mixture. Place chicken thighs in slow cooker on top of onion slices. Pour in sauce mixture, and cook in slow cooker on low for 6 hours. Serve over a cup of brown rice with a little bit of lime juice squeezed over top. Make 5 large portions (which is what the nutrition information is calculated with, including rice) or 10 smaller servings.
