Quinoa Stuffed Acorn Squash

2 acorn squash, cut in half and seeded1/2 C quinoa1 C unsweetened apple juice1 t cinnamon1/4 t cloves1/4 t nutmeg1/4 C chopped pecans1/2 C craisins
Bake acorn squash in a shallow dish with 1/2 inch of water in it for 40 minutes at 375 degrees.
While the squash is baking...Combine apple juice, quinoa and spices in sauce pan. Bring to a boil. Simmer for 20 minutes until juices are absorbed. Add pecans and craisins.
When squash has baked for 40 minutes, remove from oven and turn over. Fill with quinoa mixture and return to oven for 15 minutes.
Makes 4-8 servings depending on the size of your squash. If your squash are especially large, you may want to double the amount of quinoa stuffing.
