balsamic apricot chicken

Ingredients
Chicken Breast, no skin, 20 ounces (remove)Onions, raw, 1 cup, chopped (remove)Olive Oil, 1 tbsp (remove)balsamic vinegar, 1 tablespoon (remove)White Wine, 3 fl oz (remove)*Apricot Preserves (sugar Free with Splenda), Smucker's, 2 tbsp (remove)
Directions
season chicken with season salt, poultry seasoning and salt and pepper. Pound thin.

pan fry in 1 tbsp olive oil and brown both sides over medium-high heat.

remove chicken and set aside.

add diced onion (and the extra oil as necessary) to the pan. This may be on med rather than high temp. Add1/2 wine to deglaze. Add balsamic. Add apricot preserves and remaining wine until a glaze is formed and onions are cooked.

Add back chicken and simmer for an additional 15 -20 minutes until chicken is cooked thru.
