Creamy Coleslaw

1/2 head or about 1 lb Cabbage, shredded or chopped1-2 Carrots, grated or julliened1/2 c. buttermilk2 tbsp. light mayo2 tbsp. sour cream1 tbsp. dijon mustard1/2 tbsp. cider vinegarpinch sugarsalt and pepper to taste
To avoid watery coleslaw, chop or shred the cabbage, toss with salt and let stand in a strainer for about an hour. Pat dry and proceed.
Whisk all dressing ingredients together until smooth. Add cabbage, carrots and onion if desired and toss to coat. Chill for at least 1 hour before serving. Makes about 3-4 1 cup servings.
