Tilapia Grill with Veggies

Ingredients
Tilapia FilletsFresh whole mushroomsCherry tomatosAsparagusOlive OilSaltPepper
Directions
I use charcoal to cook on and use a medium to med/high heat and this recipe cooks very quickly.

Wash the fillets and pat dry with paper towels. Wash all vegetables, I remove the stems from the mushrooms and only use the tops. Break tough stem portion from asparagus.

Chop a few mushrooms, tomatos and asparagus to include in the foil packets with the Tilapia peices. I put 2-3 fillets in each packet. Brush olive oil on foil before adding anything to it, then drizzle some over the fish before closing up the packets. Place Tilapia packets on grill over heat, cook about 5-7 minutes on each side. Fish doesn't take long to cook on a grill. Remove from grill.

Drizzle the vegetables with olive oil, salt and pepper. I use a vegetable grilling tray for the asparagus and tomatos. The mushrooms go straight on the grill, warm them with the stem side down and then turn over to finish grilling...when the button fills with mushroom juices the mushroom has finished cooking. When vegetables have slightly browned they are finished, remove them from the grill.

Salt or season to your preference.
