Broccoli Qunioa Salad

Ingredients
Broccoli, one medium headQuinoa (any brand)Spring leaves lettuce mixEgg, hard boiled (optional)Toasted seeds (flax, sunflower, or sesame are my favs!)Parmesan cheeseOlive oil (for dressing)Lemon juice (for dressing)
Directions
Put quinoa in a small pan. Cover with cold water plus an inch, simmer until all the water is gone (15-20 minutes). Spread it on a tray and cool to room temp.

Steam or roast the broccoli.

Assemble:
Lay down spring mix. Top with broccoli, then quinoa. Finish off with seeds and egg. Top with lemon juice & olive oil just before eating. Makes 2 salads.
