Lentils with Kale and "Sausage"

Ingredients
4 garlic cloves, minced2 tsp coriander1 tbsp olive oil1 qt. vegetable broth2 bay leaves1 cup lentils (brown or green)2 cups diced potatoes with skin8 oz. sausage (soy or chicken; chicken used in calorie count)4 cups stemmed and chopped kale (or spinach if you prefer)Salt and pepper to tasteCheese to garnish
Directions
Cook the garlic and coriander in the oil in a large pot for a minute. Add the broth, bay leaves and lentils. Cover and bring to a boil. Reduce the heat and simmer for 10 minutes.

Add the potatoes. Return the cover and cook until the potatoes and lentils are tender, about 15-20 minutes.

While the stew simmers, slice the sausage into rounds and saute them in a skillet over medium-low heat until browned.

When the potatoes and lentils are done, stir in the browned sausage and kale; stir and cook until the kale is tender, about 5 minutes. Add salt and pepper to taste, and top with a grating of cheese.

Makes FOUR servings.
