Homemade Sweet Buttermilk Cornbread

Ingredients
1/3 cup butter, softened 2/3 cup sugar 2 eggs 1 1/2 cups all-purpose flour 1 cup cornmeal 3 teaspoons baking powder 1 teaspoon salt 1 1/2 cups low fat buttermilk1 cup creamed corn 1 tbsp butter (split in half)
Directions
1. Preheat oven 375 degrees. You will use 2 9 inch cake pans
2. Mix butter, sugar, and eggs w/ electric mixer till well blended.
3. Sift flour, cornmeal, baking powder, and salt. Add to butter mixture. Add Buttermilk and creamed corn. Mix well.
4. Place 1/2 tbsp butter in each pan. Place in oven for 5 minutes till butter has melted. Pour batter in each pan evenly. Bake in oven for 30 minutes or do toothpick test to see if done.
5. Serves 20

    Good! I modified a little bit with Lite Salt and replaced about 1/4 of the sugar with granulated sucralose - might try doing half and half with sugar/sucralose. - 12/15/15
