Healthier Banana Cinnamon Raisin Muffins

Ingredients
1/2 cup splenda (sugar substitute)2 tsp baking soda1/2 teaspoon salt2 tsp cinnamon3 cups whole wheat flour1/2 cup olive oil1/4 cup egg substitute1/2 cup Skim milk (Fat-Free)4 medium bananas, mashed (around 2cups)2 tsp vanilla extract2 (1.5oz) boxes of raisins
Directions
Preheat oven to 375� F. Sift together sugar, cinnamon, baking soda, salt and wheat flour into a bowl to mix well. Add olive oil, FF milk, mashed ripe bananas, egg substitute and vanilla extract and mix just until flour is moistened. Fold in raisins. Use either non-stick muffin pan, muffin papers or cooking spray to prepare pans. Fill muffin cups 2/3 full with batter and bake 15-20 minutes or until golden brown. Remove from pan right away and allow to cool on wire rack.

Makes 30 (1.5 oz) muffins
