Autumn Butternut Squash Soup

Ingredients
1 medium butternut squash, peeled, seeded and cubed1 apple, cored and cubed2 small onions, diced1 Tbsp olive oil2 Tbsp maple syrup4 cups chicken brothPinch nutmeg, black pepper, and salt
Directions
Heat olive oil in a large pot over medium heat. Add onions, squash and apple. Stir to saute a five minutes until soft. Add chicken broth, cover with a lid and allow to simmer for 15 minutes until squash is fork tender.

Using a hand blender (or in batches in a blender) puree the soup until smooth. Stir in maple syrup and spices to taste.

Serve hot.
