10 eggs (eggland's best have lower cholesterol)1/2 c. flour1/2 tsp. salt1 pint cottage cheese (1% milkfat)8 oz. shredded mozarella cheese (low fat)1/2 chopped green bell pepper1/2 cup chopped tomatoes1 cup chopped fresh spinach
Beat eggs, add other ingredients (except tomatoes), pour into cup cake liner, add tsp. of tomatoes to each, (1/2 sausage link can be added for 20 calories), bake at 350 degrees for approximately 20 minutes. Make 22 servings
Can be frozen and heated up for on the go, make a quick egg breakfast sandwich, or serve with salsa at brunch. Add a tablespoon of your favorite breakfast meat or a tablespoon of sliced mushrooms.
