2 large eggs1/2 cup all-purpose flour, unbleached1/2 cup whole milk2 Tablespoons light butterDash nutmeg2 Tablespoons granulated sugarJuice of one lemon
Preheat oven to 400ºF. In oven proof skillet, melt butter over medium heat (stove-top) until bubbly. Combine eggs, flour, milk and nutmeg in bowl until well incorporated. Pour batter into skillet. Poke the mixture a few times with a fork to release air. Place in preheated oven and cook for 10-12 minutes. Sprinkle crepe with sugar. Bake an additional 4-6 minutes. Remove and squeeze a fresh lemon over crepe. Cut into 8 pie-like slices. Enjoy!
