Edamame Stew

Ingredients
1 package shelled Edamame (12 oz)1 yellow onion, diced2 medium Zucchini, diced2 cloves Garlic20 oz canned Diced Tomatoes, no salt added2 tsp Ground Cumin1 tsp Ground CorianderJuice of half a lemon4 tbsp Cilantro, chopped
Directions
Cook Edamame according to package directions.

Saute onions, zucchini and garlic in a large pan until soft.

Add diced tomatoes, cumin, coriander and salt & pepper to taste, and simmer until thickened (about 5 minutes).

Stir in lemon juice and ciltrano just before serving.

Serve over brown rice, spinach or lentils. Makes four servings.
