Asparagus Supreme

1 1/2 lbs fresh asparagus2 tablespoons butter2 tablespoons all-purpose flour1/2 tsp salt2/4 tsp pepper1 cup milk (I use skim)4 hard boiled eggs diced1 jar (2 ounces) diced pimientos, drained (I omitted)1 cup (4ounces) monterey jack cheeseDry bread Crumbs
cook asparagus in boiling water till tender, drain set aside.
In a small saucepan, melt butter, add flour, salt and pepper cook and stir until smoothe and bubly. Gradually add milk, cook and stir until thickened (Skim milk doesn't thicken good so don't worry) remove from heat. Place half of the asparagus in a greased 1 1/2 qt baking dish. Top with half of the white sauce, eggs, pimientos and chees. Repeat layers. Sprinkle with bread crumbs. Bake uncovered at 325 for 30-35 mintes. serving size is 4 oz
