Green Papaya Salad

Ingredients
1 medium green papaya1 large cucumber2 medium carrots1 tsp minced garlic2 tsp chopped fresh cilantro1 tsp sugarJuice of 2 limes
Directions
Preparation:
* Peel the papaya and, using a grater, shred the pulp finely. Discard the seeds.
* Peel the cucumber and carrots, then grate them.

Assembly:
* In a medium bowl, combine the papaya, cucumber and carrots. Add the garlic, cilantro, sugar and lime juice.
* Chill before serving.
