Halibut and Vegetable Lettuce Wrap

Ingredients
1/2 lb Halibut, diced small4 oz. organic shitake mushrooms, julienned3 cloves minced garlic1.5 TB minced ginger1 med organic red bell pepper, brunoise1 med organic red onion, brunoise1 oz. orange Zest1 cup Napa cabbage1 cup raw carrot strips1.5 TB hoisin sauce1.5 sesame seeds toasted1.2 cup soy sauce, low sodium1/2 cup rice vinegar3 tsp lime juice1/2 Tb sesame oil1 Tb brown sugar1 head red or green leaf lettuce8-16 oz. rice sticks, fry.
Directions
In hot pan saute garlic and ginger. Add mushrooms, red pepper and red onion. Add Halibut and saute until cooked through.
Add hoisin sauce and orange zest.
For Dipping Sauce: Mix toasted sesame seeds, soy sauce, rice vinegar,lime juice and brown sugar.
To assemble: Portion out on plates; 2-3 lettuce leaves, carrrot shreds/sticks, napa cabbage chiffonade, rice sticks and halibut mix ( 1/6th of recipe) with small bowl for dipping sauce (1/6th of recipe)in the middle of plate.
