Elli's sugar-free muffins

Ingredients
1 cup oatmeal2 cups milk2 eggs (lightly beaten)1 2/3 cup whole wheat flour1 tsp Baking Soda1/2 tsp salt1 cup chocolate chips/banana/nuts/whatever you want
Directions
makes 12 muffins

1. Soak the oatmeal in the milk in a covered container overnight.

2. Preheat the oven to 425 degrees.

3. Wisk in eggs to milk & oatmeal.

4. Sift in flour, baking soda, and salt. Stir until just mixed.

5. Stir in chocolate chips.

6. USE PAM ON MUFFIN TINS and do NOT use muffin cups. There is not enough oil in these muffins to easily peel cups off so you'll end up eating paper!

7. Cook for 15-17 minutes in centre of oven.

8. Allow to cool and enjoy!
