1 can albacore tuna packed in water 1 tbsp pickle relish2 tbsp Hellmans low fat mayonnaise3 tbsp chopped onion2 slices medium tomato1 slice swiss cheese1 English muffin
1.Preheat oven to 350 degrees
2. Mix tuna, onion, mayonnaise & pickle relish in a bowl until well combined.
3. Lightly toast english muffin place a spoonful of tuna mixture on each half of english muffin top with one slice of tomato and half piece swiss chesse each.
4.Bake for about 10 minutes or until cheese is bubbly

This is a quick and healthy option for lunch or dinner on the run. I substituted salsa for the relish and added a tsp of mustard (as suggested by others) and it tasted great. I had enough tuna left over for at least 2 more servings. Will probably add more mustard and spices for more kick next time. - 5/17/13
