Mango/Blueberry/Raspberry SUPER HEALTHY Bran Muffins

2 1/2 cups wheat bran1/2 cup psyllium husks1 cup boiling water1/2 cup unsweetened applesauce2 eggs1 cup low-fat 1% plain yogurt2 tbsp honey2 1/2 cups whole wheat flour2 1/2 tsp baking soda1 tsp salt2 1/4 cup mango1 cup blueberries1 cup raspberries
Pour boiling water over 1 cup of wheat bran; preheat oven to 400.
In separate bowl, mix remaining bran, psyllium, applesauce, eggs, honey & yogurt. Add in flour, baking soda & salt. Stir in frozen fruit.
Line muffin tin with muffin papers; scoop 1/4 cup into each muffin cup. Bake at 400 for 20 minutes. You can store batter in the fridge for 2-3 weeks and bake as needed if you want. Enjoy! Makes 42 muffins.

Has anyone tried to make this? I am wondering if there are some wet ingredients missing. These were so hard to mix and the dough was very thick. Maybe that is how it should be. I did end up adding a little skim milk. I formed the batter into balls then put in the muffin cups to bake. - 6/8/14
