1/2 cup Great Value Egg Substitute1/2 cup chopped green pepper1/2 cup chopped onion1/2 cup chopped fresh mushrooms (about 2 average size)Olive oil spray
Chop fresh veggies. Spray pan with olive oil spray. Over medium heat, saute veggies until tender. Pour egg substitute over veggies and continue cooking, turning eggs as edges get dry. Do not overcook as they will dry out. If necessary, you may spray a little more olive oil on the veggies while cooking if they appear to be sticking. Serves 2. (I usually chop veggies, make 1/2 recipe for myself, and refrigerate remaining veggies for a second serving later in the week.)
