Recipe: Chicken with Artichokes & Mushrooms

Ingredients
1 Lb chicken breast1 jar (8oz) mushrooms1 1/2 cups chicken broth1 can (10oz) artichoke hearts4 Tablespoon "butter" spread2 Tablespoons flour1 1/4 cup half and half (fat free)1/2 cup parmesan cheese1/4 tsp salt1/4 tsp pepper1 tsp rosemary
Directions
Preheat oven to 325
Melt 1 Tbsp "butter" and quickly saute mushrooms - remove from skillet
add chicken & chicken broth to skillet and simmer 20 minutes. Save 1/2 cup chicken broth
Place chicken in 9 x 13 baking dish
chop up artichoke hearts and spread over chicken
melt 3 Tbsp "butter" and whisk in flour
Add in half and half and chicken broth and stir until thick (5 min)
Turn off heat and add in parmesan cheese and spices
Pour sauce over chicken and spread mustrooms on top
bake in oven for 30 minutes
