Dark and Spicy Molasses Bread

*Active Dry Yeast, 4.5 tsp Water, tap, 0.5 cup (8 fl oz) Butter, salted, 4 tbsp Molasses, 0.5 cup Milk, 1%, 2 cup Brown Sugar, 9 tsp packed *All Purpose Unbleached Flour, 5 cup *Whole Wheat Flour, 2.5 cup Wheat germ, crude, 0.5 cup Salt, 3 tsp Cloves, ground, 0.25 tsp Ginger, ground, 0.5 tsp Nutmeg, ground, 0.25 tsp
Sprinkle yeast on warm water and let dissolve 5 minutes. In a saucepan heat butter, molasses, milk and brown sugar. Do not boil. Remove from heat and let stand several minutes. When cooled to lukewarm, add dissolved yeast. In a large bowl combine flour and remaining ingredients. Gradually add folur mixture to first mixture which has been poured over into another large bowl from sauce pan. Beat mixture well after each addition of flour mixture. Turn dough onto floured bread board and knead 5-6 minutes until smooth and satiny. Place dough in a greased bowl. Cover bowl and let rise in a warm place until double in bulk. (About 2 hours). Punch down. Divide into two loaves and place in greased bread pans. Cover. Let rise in a warm place until an inch above loaf pan tops. Bake in 350 degree oven 35-45 minutes. Brush tops with butter and remove from pans immediately.
