Ingredients
1 TBS Olive Oil1/3 cup chopped fresh cilantro1 lime,juiced2 1/2 cups of water1 cup of Uncle Ben’s Whole Grain Brown Rice
Directions
Put 1 TBS of EVOO in a saucepan. Rough chop the cilantro and add to the pot. Add the juice of 1 lime to the pot. Add in the water and then the rice. Cook slowly until the rice is tender.

Makes 8 1/2-cup servings.
