2/3 c. flaxseed meal1/4 c. vegetable broth (I freeze the broth from cooking vegetables in ice-cube trays) 1.5 lbs. ground turkey1/2 small onion, chopped1 large egg, lightly beaten1/4 c. Amy's (or Kamuela1's Homemade) salsa2 tbsp. chpped fresh parsley1 tbsp. mustard flour1 1/2 tsp. salt1/2 tsp. ground rosemary1/2 tsp. turmeric1/2 tsp. cayenne (red) pepper1/2 tsp. curry powder1/3 c. carrot mash (saved from juicing carrots, kept in freezer), or grated carrots
Preheat oven to 350º F. Place flaxseed meal and vegetable broth in large bowl, stir until well combined. Let set 5 minutes. Add remaining ingredients, leaving aside 1/2 the salsa for later, (turkey, onions, egg, salsa, parsley, mustard, salt, rosemary, turmeric, and carrot mash). gently mix until well combined. Transfer mixture into loaf pan, brush top with remaining salsa. Bake until internal thermometer 165º or approximately 90 minutes. Serves 6.
