Chicken with Olives and Dates

Ingredients
1/2 tbsp olive oil1 garlic clove, minced1/2 tsp ground ginger1/2 tsp ground cumin1/4 tsp paprika1/4 tsp turmeric1 tsp ground ginger1/8 tsp cinnamon1/8 tsp salt2 chicken breast pieces1 date, chopped1/8 cup chicken broth5 kalamata olives, chopped1/2 tbsp lemon zest
Directions
1. Combine oil, garlic, ginger, cumin, paprika, turmeric, cinnamon, and salt. Add the chicken and allow to marinade for an hour.
2. spray a non-stick skillet with olive oil. Add chicken and broth, cover and cook for 15 minutes. Turn the chicken and sprinkle with dates, olives, apricots, zest, and 1 tbsp water. Cover and continue to cook, checking occassionally, for about another 10-15 minutes (or until cooked).
