Pancakes - Healthy Pancakes

1 1/2 cups whole-wheat pastry flour2 eggs, lightly beaten1/4 cup canola oil2 cups low-fat milk (I use soy)2 tsp. baking soda1/2 cup wheat germ
In medium bowl, mix eggs with oil and low fat milk.
Stir in baking soda, wheat germ, and flour; mix until blended.
Heat a lightly oiled griddle or frying pan over medium-hight heat.
Pour or scoop the batter onto the griddle. Brown on both sides, turning once. (10 servings) 3 pancakes equals 1 serving)
Use fresh fruit and a small amount of real maple syrup, honey, or molasses as a topping; pancakes syrups can contain corn srup and other processed sugars that you want to avoid.
