Tomato, Spinach and Basil Barley

1 cup raw pearled barley1 cup canned tomatoes1.5 cups fresh spinach10 leaves of basil 2 tbsp olive oil1/2 medium raw onion, chopped1 tsp garlicSalt to tastePepper, red or cayenne to taste
* With a bit of salt, boil 1 cup barley in a pot with 3 cups water for 35-45 minutes - until cooked
* Strain and run barley under warm water and set aside
* In the pot, add olive oil, garlic and onions and sautee on medium heat until onions are a bit translucent
* Add tomates and basil and simmer gently for about 5 minutes
* Add spinach and barley and mix thoroughly
* Add salt and red pepper/cayenne to taste
* Let cook for 3-5 more minutes and serve
