scallion ginger chicken

Ingredients
4 tsp canola oil4 boneless skin less chicken breast (diced)8 scallions (green onion)4 tsp grated fresh ginger 1/2 cup chicken broth 2 tbsp soy sauce 1 tbsp cilantro
Directions
heat oil in wok add diced chicken. brown slightly.
add white portion of scallion into skillet , as well as ginger. cook for 1 minute. stirring add broth, soy sauce. bring to simmer and cook until chicken is cooked thru . Remove from heat stir in scallion greens , cilantro and serve.
great with stir fry veggies or over rice
