Sweet Italian Sausage & Vegetable Soup

Ingredients
1/2 c olive oil; 3 tbl. butter; 3 links sweet Italian sausage, removed from casings and crumbled; 1 c thinly sliced onions; 1 c diced celery; 1 cu diced carrots; 2 x peeled, diced potatoes; 1 c diced green beans; 3 c shredded Savoy cabbage; 6-8 c chicken broth; 1-1/2 c canned cannellini beans, draind and rinsed; salt & Pepper; 1 c mixed rice; Parmesan cheese
Directions
Heat olive oil and butter in a large soup or stock pot. Add sausage meat and saute' over high heat just to brown.

Add fresh vegetables in the order listed, cooking over high heat for 3-4 minutes after each addition. After adding cabbage, cook for 8-10 mins. Add broth, tomatoes, beans and rice. Bring to a simmer and simmer uncovered for 2 hours. Check seasoning and serve with grated Parmesan.

    Excellent, hearty soup. I was confused that the ingredients called for potatoes but the instructions said tomatoes. I used 2 potatoes and 1 can organic diced tomatoes and did not add the rice. Very flavorful and yummy. Will definitely make this again. - 1/24/16
