Stepf's Sweet and SPICY Smoked Almonds

4 cups raw almonds 1 T chili powder or flakes (I used ground whole chilis)1 T smoked paprika 1 t ground cumin1 1/2 t cinnamon1 T chopped fresh rosemary 1/2 t black pepper1/2 cup brown sugar, packed 2 egg whites1/4 t kosher or coarse sea salt
Preheat the oven to 350 degrees Fahrenheit.
In a medium bowl, mix the spices together, then add the egg whites and mix thoroughly. Add the brown sugar and stir until the sugar is completely wet. Add the almonds and mix well to coat.
Cover a baking sheet with parchment paper. Spread the almonds in a single layer on the pan.
Bake 25 minutes, stirring occasionally, until the coating has adhered. The coating will still be slightly tacky.
Allow to cool and place in airtight containers. Store in a cool, dark place for up to two weeks.
Makes 16 1/4 cup servings.
