2 lb. Bag of Red Potatoes2 Tbsp. Extra Virgin Olive Oil1/2 Cup Yellow Onions2 Cloves Garlic1 Tsp. Black Pepper1 Tsp. Salt (or Garlic Salt)
Wash and cube the red potatoes.
Put the prepared potatoes into a microwave safe dish and microwave on hight for 15-20 minutes in five minute increments, stirring after each cycle.
While the potatoes are microwaving, chop the onions and mince the garlic.
Pour the olive oil into a pan over medium-low heat, and add the prepared onions and garlic.
Allow the onion and garlic mixture to soften while the potatoes are in the microwave.
Once you are able to easily pierce the potatoes with a fork, remove them from the microwave and incorporate them into the mixture in the pan.
Allow the potatoes to brown and crisp on the outside, and serve.
Makes approximately 5 half-cup servings.
