Shrimp and Vegetable Pasta

Ingredients
4 oz Whole Wheat Thin Spaghetti1 T Olive Oil2 garlic cloves, finely chopped1 cup chopped yellow peppers1/4 cup chopped onion40 small cooked shrimp, peeled and devined 3 cups crushed and blended tomatoes, or used canned tomatoes1 cup fresh spinach1 T fresh parsley
Directions
Makes five 1-cup servings

Cook pasta according to directions and set aside. Saute garlic in olive oil for 1 minute on medium high heat. Add peppers, onion and shrimp. Cook for 3 minutes. Add tomatoes, spinach and parsley. Cook until spinach is wilted.
