Black Bean and Mushroom Soup

Ingredients
dried black beans, 4 cupschicken stock, home-prepared, 12 cupscarrots, raw, 2 largecelery, raw, 2 stalk, largemushrooms, fresh, 2 cup, pieces or slicesdiced tomatoes & green chilies (RoTel)10oz can2 bay leaves
Directions
Soak black beans overnight, or use the quick-soak method. Rinse after soaking. In 6-7 quart crock-pot, add black beans, chicken stock, diced carrots and celery, and bay leaves (I do not crumble, just add whole). Cook on low for about 4 hours. Add mushrooms. Cook another 3-4 hours. Add one can of Rotel tomatoes. Heat and serve. Fills crockpot about 3/4 full. Serves about 12.
