1 large daikon (mooli) root, peeled and sliced 1cm thick 1 Tbsp mirin1 heaping tsp dashi granules2 Tbsp Kikkoman soy saucewater
Prepare daikon and arrange in a single layer in a very large saucepan or lidded frying pan. Add seasonings and just enough water to barely cover. Bring to a boil, covered, then turn heat down to a gentle simmer. After 30' turn all the slices, and simmer a further 30' or until tender and translucent. Towards the end of cooking time the stock may have boiled away, so watch it does not burn. Try not to add any water so the flavour remains concentrated.
