Pear, Onion, Chard Quiche

1 T olive oil 4 cups swiss chard4 cups mesclun mix2 onions1 shallot2 eggs1/3 cup egg white2 cups skim milk1/2 cup garbanzo bean flour1/2 cup parmesan1/4 cup blue cheese1 pear
Saute onions and shallot in oil until translucent. Then, add chard and mesclun and saute until greens are 1/4 of their original size. Spread sauteed mixture into a 9 x12 baking pan. Top with cheese and pears. Meanwhile, beat together eggs, milk and flour. Pour into pan and bake at 350 for an hour or until egg mixture is set.
