Surimi & Red Pepper Pasta

Ingredients
8 oz. Surimi (imitation crab), chopped4 oz. dry pasta (I prefer Rotini).5 cup sliced red pepper.25 cup Philadelphia 1/3 less fat Onion & Chive Cream Cheese.25 cup shredded Parmesan Cheese2 scallions /green onions, separate the white/green parts - sliced3 cloves of garlic, minced1 T butter.5 t seasoned salt .25 t cayenne pepper (or to taste, I use 1/8 t)
Directions
For this recipe, you need a pot for cooking your pasta & a large skillet for sauting & later - combining in the pasta.

After you have brought your cooking water to a boil, cook pasta according to package directions (it s/b roughly 8-9 minutes).

In a skillet, melt the butter. Once melted toss in the garlic & sliced white part of the green onions. Saute for one minute or until garlic becomes fragrant. Add sliced red pepper & continue to saute until the red pepper becomes tender - approximately 4 minutes.

Add in the cream cheese & lower heat to med-low, to allow cream cheese to melt without drying out. Measure out 1 cup of pasta water at this time to use as needed in keeping this dish creamy.

Add Surimi, salt and cayenne & toss til well mixed.

Drain Pasta & add to Surimi mix. Add in the green onion & Parmesan at this time & toss until all ingredients are well combined. Again, check the consistency to make sure it is not too dry. If it is - adjust by adding some of the pasta water until desired consistency is reached.

Portion out into 2 pasta bowls & serve.
