Ingredients
2 cups cooked brown rice, long grain1/2 cup old fashioned oatmeal1 cup chopped walnuts2 cups chopped raw onions2 cloves chopped garlic3 cups low fat shredded cheddar cheese3 large eggsBlack pepper to taste
Directions
Cook rice. Beat eggs in a large bowl and then add everything else. Put in a greased loaf pan and cook for 50 minutes or more at 350 degrees until well browned and cooked through (test with a skewer as you would a cake).

This is good topped with tomato sauce.

Makes eight main dish servings or more side dish servings.

    I loved this! I modified it to be more cholesterol friendly by using egg whites and fat free cheddar. I don't usually use fat free cheese, and I'm sure it's not as tasty, but this was delicious to me and I will be adding it to my regular arsenal of recipes. - 11/28/10
